❅Joyful Christmas 雙倍快樂❅ - 甜品篇




年年都食聖誕布甸已經開始有啲悶,今年一於扚起心肝 整啲另類甜品氹下自己同屋企人! 紅酒無花果芭菲杯你又試過未?想整嘅就俾「Like」啦!

1. 先將紅酒無花果材料(無花果除外)放入鍋內煮滾,加入無花果後轉細火煮5分鐘。
2. 將無花果撈起瀝乾,切成小塊備用。
3. 將溫熱嘅紅酒無花果糖水加入魚膠片,攪拌至溶解後雪凍成果凍備用。
4. 將所有乳酪材料攪至順滑。
5. 將手指餅浸入紅酒無花果糖水後並放在杯內,加入乳酪,再依次序放上無花果、果凍,手指餅同埋乳酪。杯面放埋無花果同烘香開心果碎裝飾。

-紅酒無花果所需材料 :紅酒 190毫升、水 190毫升、橙皮 1/4個、檸檬皮 1/4個、蜂蜜 140克、雲呢拿條(切半、刮出種籽) 1/4條、肉桂條 適量、新鮮無花果 4個、
-乳酪材料:無糖乳酪 500克、橙皮蓉半個量
-紅酒果凍材料:紅酒無花果糖水 300毫升、魚膠片(浸軟) 6克
-配料︰手指餅適量、開心果碎(烘香)適量、橙皮絲適量

Joyful Christmas! – Festive dessert

Want to have a different dessert for this Christmas? Let’s try wine-poached figs with yogurt! Hit ‘LIKE” if you want to make it!

1. Combine all syrup ingredients except figs in a pot and bring to a boil. Reduce to a simmer and add the figs. Cook for 5 minutes.
2. Remove the figs with slotted spoon. Cut into pieces and chill.
3. Squeeze out any excess moisture in the gelatine. Add to the syrup and fold until it’s melted. Chill until set.
4. Combine all yogurt ingredients and fold until it’s smooth.
5. Soak the sponge fingers in the syrup and transfer to cups. Pour in yogurt, figs, jelly; followed by sponge fingers and yogurt again. Garnish with figs, orange zest and chopped pistachios.

Ingredients:
For red wine syrup:
190mL red wine, 190mL water, grated rind of 1/4 orange, grated rind of 1/4 lemon zest, 140g honey, 1/4 vanilla pod (halved lengthways, seeds scraped out), some cinnamon sticks, 4 fresh figs

For yogurt:
500g sugar-free yogurt, 1/2 orange zest

For red wine jelly:
300mL red wine syrup
6g softened gelatine leaves

Garnish:
Sponge fingers
Orange zest
Roasted and chopped pistachios
